Flipping Eck! Linby’s The Home Of The Pancake?
As residents flip and devour pancake after pancake tonight, residents are being encouraged to buy locally produced jams and freshly laid eggs from the only shop in the village where the pancake was invented – Linby’s Brooke Farm.
A local legend claims that the pancake was invented by the women of the village in Saxon times to celebrate the defeat of Danish invaders who had enslaved them after their husbands fled.
The farm’s shop sells free range eggs laid by chickens on site along with a range of jams made with fruit grown at the farm and other pancake ingredients such as milk, oranges and lemons.
Brooke Farm is a commercial enterprise growing vegetables and plants for sale to the general public. The farm employs staff with mixed abilities and offers training to people with disabilities.
Ian Holland, the shops team manager, said “It’s something that’s not that widely known but in the village there is some information that gives lots of information on the village and what’s gone off in days gone by and it’s a local legend that claims that the pancake was invented by the women of the village in Saxton times to celebrate the defeat of Danish Invaders”
The farm shop offers a range of home-grown produce for sale, including free range eggs, seasonal vegetables, salad and fruit, flowers and plants along with locally-sourced products such as bread, milk, preserves, pickles, cakes and biscuits.
Brooke Farm is located on Main Street, Linby, and is open Monday to Thursday 8am to 3.45pm, Friday 8am to 3.15pm and Saturday 8am to 3pm.
